Billing vs. shipping email
WooCommerce records the billing email address. There is typically no separate shipping email field.
Guest vs. registered customers
WooCommerce allows guest checkout. Guest customers provide an email at checkout but do not create an account. Both guest and registered customer emails appear in order exports.
Refunded orders
Refunded or cancelled orders still have billing email addresses. Depending on your export settings, these may be included.
